3x healthy toasted sandwich

There are some things I would never be able to remove from my life: chocolate, croquettes and of course toasted sandwiches. Big or small, with or without  cheese – I like them all. Because I want to eat toasties as much as possible, throughout the years I’ve gathered some delicious and healthy recipes! And I am nothing but happy to be able to share them with you!

CHICKEN PESTO SANDWICH

Ingredients:

  • 2 slices of spelt bread/sourdough bread
  • 2 table spoons cottage cheese
  • 1 table spoon pesto
  • 2 slices of chicken breast
  • 3 cherrytomatoes (in slices)

Preparation:

  • Mix the cottage cheese and pesto together and spread them on both slices of bread
  • Then place the slices of chicken breast and tomatoes on the sandwiches
  • Put the bread in the toaster for about 3 minutes (this can vary per toaster, so be careful!)

MOZZARELA & SPINACH

Ingredients:

  • 2 slices of spelt bread/sourdough bread
  • ½ mozzarella ball
  • A handful of spinach
  • 4 sundried tomatoes

Preparation:

  • Cut the mozzarella into slices and place them on one half of the sandwich
  • Garnish the sandwich with spinach and tomatoes
  • Put the sandwiches together and put them in the toaster for about 3 minutes

CHUNKY MONKEY

Ingredients:

  • 2 slices of spelt bread/sourdough bread
  • 2 table spoons peanut butter
  • ½ banana (in slices)
  • 1 table spoon cocao nibs/pieces of dark chocolate
  • 5 chopped walnuts

Preparation:

  • Spread the slices of bread with peanut butter and top with the banana
  • Sprinkle the cocoa nibs/dark chocolate and walnuts over this
  • Put the bread in the toaster for about 3 minutes

    Love your blog guys – just an FYI that some of the articles are half in Dutch, half in English! Lucky I can also read Dutch 😉 might be something to work on x
