Some of my best summer holiday memories are from the times when I went to Italy with my family. Italy is such a beautiful country and the food is simply A-MAZEBALLS! Like from the pizza, to the pasta, to the gelato, and all the way to the RISOTTOS 😍! My love for risottos is a relatively new one as I used to always think that they were so difficult to make, but once I tried it, I couldn’t stop making them anymore. Another perk with risottos is that everything tastes good in it! Risottos are the perfect carb to eat in the summer as they bring them mediterranean vibes straight to wherever you are. Making you feel like you’re already on your holiday. Here are 4 of my favourite risotto recipes:
1. Tomato, red wine & chorizo risotto

Also called the Chozitto, this risotto recipe is perfect for when you’re trying to impress your partner, best friend, or mother in the kitchen.
Ingredients (4 serves):
- Olive oil
- 2 Shallots
- 1 Clove of garlic
- 80g Higher-welfare chorizo
- ½ a Bunch of fresh flat-leaf parsley (15g)
- 750ml–1l Chicken or vegetable stock
- 1 x 400g tin of Plum tomatoes
- 300g Risotto rice
- 200ml Red wine
- 50g Parmesan cheese (plus extra for serving)
I personally love making this risotto recipe for my roommates, however I don’t use wine or a tin of plum tomatoes… I simply get a pot with pre-made basilico tomato sauce, since that’s easier for me as a student 😅. This shows how you can adjust the recipes to your own liking. A good tip is to add in some spinach as well, that’ll make your risotto a real nutrient-boost 😉!

2. Parmesan Pesto risotto

Pesto and carbs is a combination that simply always works, no matter the type of carb. Today it’s all about the pesto and risotto combination which works oh-so-well! It doesn’t get much more mediterranean than this 😄.
Ingredients (6 serves):
- tbsp Olive oil
- 1 Small onion, finely diced
- 2 Cloves minced garlic
- 1-1/2 cup Arbario rice
- 4 cups Chicken broth
- 1/2 cup Pesto
- 1 cup Cherry tomatoes
- 1/4 cup Parmesan cheese
- Salt and Pepper, to taste
For extra taste and variety you can once again choose to add spinach, and for the meat eaters it’s always nice to add in some chicken or ham.

3. Mushroom risotto

Another classic risotto recipe that every fancy, mediterranean restaurant offers is the mushroom risotto. If you’re a fan of mushrooms then you should definitely try out this tasty recipe. Beware: Food baby🤰!
Ingredients (4 serves):
- 50g Dried porcini mushrooms
- 1 Vegetable stock cube
- 2 tbsp Olive oil
- 1 Onion, finely chopped
- 2 Garlic cloves, finely chopped
- 250g Chestnut mushrooms, sliced & washed
- 300g Risotto rice, such as arborio
- 1x 175ml Glass white wine
- 25g Butter
- Handful parsley leaves, chopped
- 50g Parmesan cheese
Good additions: zucchini, tomatoes, chicken and/or spinach.

4. Broccoli and cheese risotto

For a back to basics risotto, this broccoli cheese version is precisely what you need. An old school, healthy culinary experience is the way to go when you’re running out of foody inspiration and you’re simply looking to use up what’s left in your fridge.
Ingredients (4-6 serves):
- 8 cups Chicken or vegetable stock
- 2 tbsp Unsalted butter
- 1 medium Leek
- 1 pound Broccoli
- Kosher salt
- Black pepper
- 2 cups Arbario rice
- 1 cup Shredded cheddar cheese
Add in some tomatoes and/or ham for an even tastier and colourful meal!
