Broccoli is one of my favorite veggies! It tastes good, it’s packed with vitamins and is also known to contain cancer-fighting antitoxins. Broccoli is one of the healthiest veggies and it’s a product that is delicious on it’s own but can also be incorporated in many other dishes. To show you how versatile broccoli can be, I listed 5 different broccoli recipes for you to try and give you some cooking inspiration!

Low-calorie broccoli quiche

Ingredients:

  • 6 ounces light mozzarella cheese
  • 2 pounds broccoli florets (frozen or fresh)
  • Salt and pepper
  • 3 cups egg whites

This low-cal quiche recipe is a quick and healthy choice for lunch or dinner. The recipe also works with whole eggs if you prefer the yolks! This is how you make it.

Broccoli soup

Ingredients:

  • 1 large broccoli
  • 2 tablespoons grass-fed butter
  • 1 cup chopped leeks
  • 4 garlic cloves
  • 4 cups vegetable broth
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper 
  • Pinch red pepper flakes
  • Optional: 1/2 cup cheddar cheese

Chicken, broccoli and mushroom stir fry

Ingredients:

  • 1 pound boneless skinless chicken breast
  • 1 tablespoon + 1 teaspoon vegetable oil
  • 2 cups small broccoli florets
  • 1 cup sliced mushrooms
  • 2 teaspoons minced ginger
  • 1 teaspoon minced garlic
  • 1/4 cup oyster sauce
  • 1/4 cup low sodium chicken broth or water
  • 1 teaspoon sugar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon soy sauce
  • 1 teaspoon cornstarch
  • Salt and pepper

Broccoli salad with avocado dressing

Ingredients:

  • 1 pound broccoli (2 small heads)
  • ½ pound carrots
  • 1 pound red grapes
  • ½ cup pumpkin seeds

For the dressing:

  • 2 avocados
  • ¼ cup fresh lemon juice
  • 2 teaspoons sea salt

Pasta with pesto, tomato and broccoli

Ingredients:

  • 2 cups whole wheat or gluten free pasta
  • 1 cup pasta water
  • 2 large garlic cloves
  • 1 tablespoon olive oil
  • 1/4 cup + 2 tbsp pesto
  • 2 cups grape tomatoes
  • 4 cups small broccoli florets
  • 1/3 cup sun dried tomatoes
