5x caprese recipes

For me, caprese is the best veggie and cheese combination that exists. Delicious mozzarella with tomato and basil… hmmm. (Sorry beetroot with goat cheese, you’re doing great on the second place!) I honestly like to eat caprese with anything: as a topping on a homemade pizza, with some pesto on a grilled sandwich or through a salad with rucola and balsamic vinegar. Because there are many more people who share this love for Italian cheese and tomatoes, I have searched for the very best caprese recipes. Enjoy!

Caprese empanadas

Ingredients: 

  • 8 oz grated/crumbled mozzarella cheese
  • 2 medium tomatoes
  • large handful of basil
  • 12-15 empanada discs (store-bought or home made)
  • 1 egg

Caprese garlic bread

Ingredients:

  • 1 ciabatta loaf
  • 4 tbsp salted butter
  • 3 cloves garlic
  • 12 oz mozzarella cheese
  • 1/2 cup balsamic vinegar
  • 2 medium tomatoes
  • salt and pepper
  • 1/3 cup chopped fresh basil

Hmmm… this garlic bread sounds and looks sooo good.

Chicken caprese

Ingredients: 

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • salt and pepper
  • 1 tsp dry italian seasoning
  • 4 thick tomato slices
  • 4 thick mozzarella cheese slices
  • 2 tbsp balsamic glaze or balsamic reduction
  • 2 tbsp thinly sliced basil

Caprese avocado toast

Ingredients:

  • 2 ripe avocados
  • 2 tsp fresh lemon juice
  • salt and pepper
  • 4 slices bread
  • 4 oz fresh mozzarella
  • 1 cup grape tomatoes
  • 1/4 cup basil leaves
  • balsamic glaze

Avocado toast just got an upgrade!

Caprese frittata

Ingredients:

  • 2 tbsp olive oil
  • 1 pint cherry tomatoes
  • 1 garlic clove
  • 3 cups fresh spinach
  • 4 oz fresh mozzarella
  • 10 eggs
  • 1/2 cup 2% milk
  • salt and pepper
  • fresh basil

This frittata looks absolutely delicious and has found a place on my menu for this week.
