5x healthy summer desserts

Summer is the time for celebration and relaxation. However, it is sometimes hard to keep enjoying the summery cheat meals when you have them just a little too often. That’s why the healthy summer desserts are here to keep your summer sweet and lean. These 5 desserts have a twist in their classic recipes in order to let the Fit Girls, like you, enjoy them without guilt!😉

1. Blueberry-lemon ricotta Pound cake

A big summer holiday needs to start with a big cake! It’ll immediately turn the good vibes mode on and leave you jolly for the next few weeks to come. This healthy summer dessert is perfect to round off that family bbq and get everyone’s bellies filled once and for all.

Ingredients (8 servings):

  • 3/4 cup (170g) Granulated sugar
  • 5 tbsp Unsalted butter
  • 3 Large eggs
  • 3/4 cup (187.5g) Part-skim ricotta cheese
  • 2 tbsp Lemon zest
  • 2 tbsp Lemon juice + 1 tsp divided
  • 1 tsp Vanilla extract
  • 1 1/2 cup (192g) White whole-wheat flour
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 2 cups (300g) Blueberries
  • 2 tbsp Packed confectioners’ sugar

2. Skinny raspberry mojito cheesecake bars

‘Mojito’ and ‘cheesecake’, is this a dream?! It sure ain’t! This cheesecake is summer ready, and wants to fill your summer holiday with happiness and love. Leave it to just those two words to make every Fit Girl’s culinary dream come true.

Ingrdients (16 bars):

Raspberry sauce

  • 6 oz (170g) Raspberries
  • 2 tbsp Water
  • 1 tsp Honey
  • 1 tbsp Arrowroot
  • 1/2 tsp Lime zest

Graham cracker crust

  • 3/4 cup (65g) Graham cracker crumbs
  • 2 tbsp Coconut oil (melted)
  • 1 1/2 tsp Fresh mint (diced)

Lime cheesecake filling

  • 1 cup (225g) Cream cheese
  • 6 oz (170g) Greek yogurt
  • 1/4 (57g) cup Sugar
  • 1/2 tsp Vanilla extract
  • 3 tbsp Lime juice
  • Zest from 1 lime
  • 2 Egg whites
  • 1 tbsp Arrowroot

3. Berry cashew cream no bake bars

Cashews and cakes, I’ve learned, go very well together. Trust me! Not only do these bars look healthy, colourful, and most of all: tasty, they are also easy to make at home! Make all your vegan friends proud and share this delicious recipe with them.

Ingredients (16 bars):

Crust

  • 2/3 cup (93g) Roasted cashews
  • 1/2 cup (70g) Roughly chopped dates

Layers:

  • 2 cups (250g) Roasted cashews (soaked in water overnight)
  • 1/2 cup Unsweetened vanilla almond milk
  • 1/4 cup Agave
  • 1 tsp Raw vanilla extract
  • Pinch of salt
  • 1 cup (140g) Strawberries
  • 1/2 cup (70g) Blueberries

4. Light summer Pavlova

The Pavlova dessert is possibly one of the most traditional and popular summer desserts ever. But damnn they are easily filled with a ton of calories. Solution? A LIGHT Pavlova! 😃😍 Cut the calorie count in half, yet you can enjoy the summer dessert just as much.

Ingredients (8 serves):

Meringue

  • 1 tsp Cornflour
  • 1 tsp White wine vinegar
  • 1/2 tsp Vanilla extract
  • 3 Large egg whites
  • 75g Golden caster sugar
  • 50g Icing sugar

Filling

  • 100ml (2/5 cup) whipping cream
  • 200g (3.5/5 cup) 2% Greek yogurt
  • 85g (1.8/5 cup) Half-fat crème fraîche
  • 2 tsp Golden caster sugar
  • 350g (1.7 cup) Strawberries
  • 150g (1.5 cup) Raspberries
  • 150g (1.5 cup) Blueberries
  • 2 Passion fruits
  • 1/8 tsp Icing sugar

  • 1 lb (450g) Blackberries
  • 1 lb (450g) Mascarpone cheese
  • 4 Egg yolks
  • 5 tbsp Granulated sugar
  • 3/4 cup (180g) Heavy cream
  • 4 tbsp Honey
  • 2 Lemons’ juice
  • 2 tsp Vanilla extract
  • 2 tbsp Water
