Yummy in my tummy! With vanilla or blueberries or with fresh lemon. There a lot of different cheesecakes and I selected six healthy recipes! Check it out and have a little dessert everyday.

Vegan raspberry cheesecake bars

Ingredients:

Crust

  • 1/2 cup pecans
  • 3/4 cup oats
  • 1 cup medjool dates
  • 1/2 tsp cinnamon
  • pinch of salt

Filling

  • 1 1/2 cups cashews, soaked overnight then drained
  • 1 can full-fat coconut cream
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • juice of 1 lemon
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Raspberry swirl

  • 1 cup raspberries
  • 1 tbsp maple syrup

Gluten free no bake lemon cheesecake

Ingredients:

Crust

  • 1 cup raw almonds
  • 1 cup unsweetened shredded coconut
  • 1 cup gluten-free rolled oats
  • 1/3 cup flaxseed meal
  • 1/4 cup maple syrup
  • 2 lemons, juice

Cheesecake

  • 7 oz coconut cream*
  • 1 cup macadamia nuts
  • 1/2 cup slivered almonds
  • 1/3 cup maple syrup
  • 4-6 lemons, juiced

Raw lemon & coconut cheesecake

Ingredients:

Base

  • 1/2 cup desiccated coconut
  • 1/2 cup raw brazil nuts
  • pinch pink Himalayan salt
  • 5 medjool dates, pitted
  • zest of 1 organic lemon (see note above)
  • 1 Tbsp coconut oil, gently melted (see note below)

Lemon Coconut Filling

  • 1 cup cashew, soaked
  • 2 organic lemons, juiced (plus zest of 1)
  • 1/4 cup drinking coconut milk (or nut milk of choice)
  • 1/3 cup pure maple syrup, rice syrup or raw honey
  • pinch himalayan pink salt
  • 1/4 cup coconut oil, gently melted
  • 1 Tbsp cacao butter, gently melted

Healthy cheesecake with cottage cheese and blackcurrant jam

Ingredients:

For the crust

  • 1 1/2 cups graham cracker crumbs (140 grams) (also works with digestive crumbs)
  • 1/4 cup caster sugar (50 grams)
  • 6 tablespoons unsalted butter (85 grams) melted
  • 1/2 teaspoon ground cinnamon

For the cheesecake filling

  • 2 1/3 cups cottage cheese (500 grams)
  • 1 cup Greek yogurt (200 grams)
  • 2 eggs
  • 1/4 cup plus 1 tablespoon maple syrup (75 grams)
  • 2 teaspoons all-purpose flour
  • 1/2 vanilla pod

For the blackcurrant jam

  • 3/4 cup blackcurrants (150 grams)
  • 1/2 cup granulated sugar (100 grams)
  • 3 tablespoons water (50 milliliters)

Vegan lemon blueberry swirl cheesecake bites

Ingredients:

For the crust

  • 2 cups organic pecans
  • 1/4 cup organic maple syrup
  • 2 tablespoons organic coconut oil
  • 1/2 teaspoon organic vanilla bean powder

For the cheesecake

  • 3 cups organic cashews
  • 1 1/2 cups organic lemon juice
  • 3/4 cup organic maple syrup
  • 1 1/4 cup organic coconut oil

For the swirl topping

  • 1 cup organic blueberries
  • 1 tablespoon organic maple syrup
  • 1 tablespoon organic coconut oil

Mango & Passionfruit coconut yoghurt cheesecake

Ingredients:

Base

  • 1/2 cup desiccated coconut
  • 1/2 cup raw brazil nuts
  • 1 tsp ground ginger
  • pinch pink Himalayan salt
  • 2 Tbsp rice syrup (or 5 medjool dates)
  • 2 Tbsp coconut oil, gently melted

Mango Passionfruit Filling

  • 1 cup cashews, soaked
  • 350g Coyo Mango & Passionfruit Coconut Yoghurt
  • 2 Tbsp lemon juice
  • 2 Tbsp lime juice
  • 2 cm fresh ginger, finely grated
  • 1/4 to 1/2 cup rice syrup (or pure maple syrup/raw honey)
  • pinch Himalayan pink salt
  • 1/4 cup coconut oil, gently melted
  • 1 Tbsp cacao butter, gently melted
  • 1/2 tsp turmeric powder
