At Fitgirlcode HQ we are quite obsessed with a certain food: avocado. And we have quite a good reason as well, because they are just so. damn. tasty! During our lunch breaks they mostly appear in sandwiches or in a wrap, but you can do so much more with them. For example, you can use them as a basis for a pasta sauce or pudding. (Yes, really!) I looked up 9 completely different recipes with avocado, from brownies to hummus. Enjoy!

Avocado basil pesto

Ingredients:

  • 1 cup fresh basil leaves
  • ½ large ripe avocado
  • 2 cloves garlic
  • 2 tablespoons pine nuts
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons water
  • ¼ cup grated parmesan cheese
  • Salt to taste

Avocado hummus

Ingredients:

  • ½ cup water
  • 15 ounces edamame (frozen and shelled)
  • 1 avocado
  • 3 garlic cloves
  • ½ cup parsley
  • ¼ cup tarragon
  • 3 tbsp chives
  • ⅓ cup lemon juice
  • ⅓ cup tahini
  • 2 tbsp pine nuts

Vegan ‘cheesy’ avocado spread

Ingredients:

  • 2 avocados
  • 1 tbsp lemon juice
  • 2 tbsp nutritional yeast
  • ¼ tsp garlic powder
  • ¼-½ tsp onion powder
  • ⅛ tsp chili powder
  • salt and pepper to taste
  • optional: fresh herbs such as parsley, cilantro, or chives

  • ½ cup panko crumbs (or homemade breadcrumbs)
  • 1 egg white
  • 1 tsp seasoning of your choice (ex: Mrs.Dash seasoning)

Creamy avocado pasta with spinach

Ingredients:

  • 10 oz spaghetti or fettuccine
  • 1 clove garlic
  • 1 avocado
  • 1 cup fresh spinach
  • ½ cup pecans
  • ¼ cup basil
  • ¼ cup Parmesan cheese (grated)
  • 1 tbsp lemon juice
  • 3/4 -1 cup pasta water
  • salt and pepper to taste

Pitas with roasted veggies and avocado dip

Ingredients:

For the avocado dip
  • 2 avocados
  • 1-2 cloves garlic
  • 2 tbsp olive oil
  • 2 tbsp water
  • a handful of cilantro
  • ½ teaspoon salt
  • 1 teaspoon cumin
  • juice of one lime
  • optional: half a Serrano pepper
For the roasted veggies
  • 2 cauliflower heads
  • 2 14-ounce cans chickpeas
  • 1-2 tsp chili powder
  • 1-2 tsp garam masala
  • optional: ½ tsp cayenne pepper
  • oil for drizzling
  • salt and pepper to taste
  • 8 small whole wheat pitas
  • Greek yogurt for topping

Avocado brownies

Ingredients:

  • 1 avocado
  • ½ cup unsweetened applesauce
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 3 eggs
  • ½ cup coconut flour
  • ½ cup unsweetened cocoa powder
  • ¼ tsp sea salt
  • 1 tsp baking soda

Avocado pudding with vanilla and honey

Ingredients:

  • 1 avocado
  • 2-3 tbsp honey
  • 2 tsp vanilla extract
  • 1 tsp chia seeds
  • 1 cup almond milk

Avocado and lime cheesecake

Ingredients: 

For the base

  • 1 cup pecans
  • 1/2 cup desiccated coconut
  • 1/2 – 3/4 cacao nibs
  • 1 cup pitted dates
  • 3 tbsp coconut oil

For the filling

  • 55 oz avocado flesh (from about 5 medium-large avocados)
  • 1/2 cup lime juice (roughly 8–10 limes)
  • 1 tsp lime zest
  • 2/3 cup honey
  • 3/4 cup coconut oil (melted)
  • optional: a few drops of stevia
