AVO-cado salads

I love avocado for lunch. I’m pretty full after lunch and I’m not craving for snacks. There are a lot of options with an avocado, but sometimes I want something different. That is why I searched for delicious lunch salads with avocado. Check out these delicious recipes.

Ceaser salad with avocado

Ingredients

Salad:

  • 1/2 ciabatta loaf (120g | 4oz), sliced
  • 2 whole Chicken Breast fillets (about 500g | 1lbs), skinless and boneless, halved horizontally to make 4 fillets
  • 1 tablespoon garlic powder
  • 2 tablespoons dried parsley flakes
  • Pinch of salt
  • 200 g | 7oz shortcut bacon, cut into strips
  • 2 eggs, boiled to your liking (soft of hard boiled), sliced
  • 2 baby cos lettuce, washed and dried
  • 1 Avocado, sliced
  • 1/2 cup shaved parmesan cheese

Dressing:

  • 2/3 cup Greek yogurt
  • 1 tablespoon olive oil
  • 2 garlic cloves, crushed
  • 2 anchovy fillets, finely chopped (or sub with 2 tablespoons black pitted olives, chopped finely and 1 teaspoon fish sauce)
  • Juice of 1/2 a lemon
  • 3 tablespoons freshly grated parmesan cheese
  • Salt and pepper for seasoning

Strawberry Avocado Spinach Salad with Chicken

Ingredients 

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon golden balsamic vinegar
  • 1 teaspoon sugar
  • 1 tablespoon roughly chopped fresh tarragon
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 6 cups loosely packed fresh spinach
  • 6-8 large strawberries hulled and quartered
  • 1 avocado peeled, seeded and cut into chunks
  • 3-4 thinly sliced rings of red onion
  • 1/4 cup feta cheese
  • 2 tablespoons sliced almonds

Mango and feta salad

Ingredients

  • 400g mixed lettuce leaves (preferably organic)
  • 8 thin slices hard feta
  • 1/2 mango, thinly sliced
  • 1/2 avocado, thinly sliced
  • 2 tbsp pistachio nuts, shelled
  • Balsamic glaze
  • Avocado oil

Asparagus salad

Ingredients 

  • 300g asparagus spears, trimmed and cut into 3cm pieces
  • 2 tbls olive oil
  • 2 cloves of garlic
  • 1/2 tsp caraway seeds
  • 170g | 1 cup cooked beans (tinned is fine, drained and rinsed)
  • 50g pea shoots, micro greens or baby spinach
  • 1 avocado, flesh diced
  • 50g 1/4 cup almonds, toasted and chopped
  • 1 tsp lemon zest
  • 1 tbls lemon juice
  • Salt and pepper to taste

Avocado Greek salad

Ingredients

For the Dressing:

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon minced garlic (or 1 large garlic cloves, minced)
  • 2 teaspoons dried oregano (plus extra to serve)
  • 1/4 teaspoon salt

For the Salad:

  • 1 large cucumber, halved lengthways and sliced
  • 4 vine ripened tomatoes, cut into wedges
  • 1 green pepper (capsicum), deseeded and sliced
  • ½ red onion, sliced thinly
  • 7 oz | 200 g good quality creamy feta cheese, cubed
  • ½ cup (3 oz | 80 g) pitted Kalamata olives
  • 1 large avocado, diced
