Banana Bread with Mango & Blueberries

One of my all time favourite things to bake is banana bread. It’s easy, super tasty and everyone loves it. This one is by far my best ever made. If you follow the recipe you can’t go wrong!

Eat it for breakfast, lunch, as a snack, dessert – this banana bread it always a good idea.  

What do you need for one loaf of banana bread?

  • 2 large eggs
  • ½  cup coconut oil (liquid, just put the jar in warm water)
  • 1/3 cup sour cream
  • ½ cup date paste (just blend 1 big handful of dates with 50 ml water)
  • 1 cup raisins
  • 1 tablespoon vanilla extract
  • 4 mashed ripe bananas (the riper/more spotted, the sweeter)
  • 2 cups of flour (I use oat flour)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons of pumpkin spice
  • ½ cup diced mango
  • ½ cup blueberries
  • ½ cup pistachiosHow to make this beauty:

  1. Preheat the oven to 180c
  2. Use a little coconut oil to grease the loaf pan
  3. In a large bowl, add the eggs, coconut oil, sour cream, date paste, vanilla. Whisk to combine
  4. Add the mashed bananas and stir to incorporate
  5. Add 2 cups flour, baking powder, baking soda, raisins, pumpkin spice and stir gently with a spoon until just combined. Be gentle! It will be less fluffy if you overmix it.
  6. In another bowl, combine the mangoes and blueberries with 1 big tablespoon of oat flour and toss to coat (this helps prevent the fruit from sinking)
  7. Gently fold the fruit into the batter
  8. Turn batter out into the prepared pan and add the pistachios on top
  9. Bake for about 60 minutes or until the top is golden, and the center is set. To test this, pick a toothpick in the center – if this comes out clean (or with a few moist crumbs, but no batter) you’re good to go
  10. Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving

Can’t finish it? Slice it up and put it in your freezer or eat it all within a week – keep in the fridge. Also really good: toast the banana bread when it comes out of the fridge. Extra tasty (but less healthy) with a little maple syrup.
