(Vegetarian) quinoa salad with grilled veggies

Ingredients

  • 150 gram quinoa
  • 1 zucchini
  • 1 eggplant
  • 1 red onion
  • 1 pepper
  • ½ tray of cherry tomatoes
  • a handful lettuce
  • thyme or oregano (1 tablespoon)
  • 1 big garlic clove
  • pinch of salt or pepper
  • olive oil

Dressing:

  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon mustard
  • 1 teaspoon honey

Warm quinoa-cauliflower salad

Ingredients

  • 1 small cauliflower (cut into roses)
  • 1 small tray of mushrooms (cut into four)
  • 1 teaspoon olive oil
  • 1 teaspoon thyme
  • 50 gram walnuts
  • 100 gram goat cheese
  • 1 handful young spinach
  • 160 gram quinoa
  • pepper and salt

Quinoa salad with sweet potato, avocado and mustard dressing

Ingredients

  • 70 gram quinoa
  • 1 small sweet potato
  • ½ avocado
  • 1 spring onion
  • a handful of arugula
  • squeeze of lemon juice
  • a few nuts

Dressing:

  • 1 teaspoon mustard
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar

  • 180 gram quinoa
  • 1 vegetarian stock cube
  • 1 cucumber
  • 200 gram cherry tomatoes
  • 1 avocado
  • 4 tablespoons olives
  • 1 spring onion
  • 1 small red onion
  • 150 gram feta
  • 2 garlic cloves
  • 3 tablespoons finely chopped coriander
  • Salt & pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • a handful of arugula

Spicy quinoa salad with feta and pomegranate seeds

Ingredients

  • 300 gram quinoa
  • 1 red onion finely shredded
  • 85 gram raisins
  • 100 gram crumbled feta
  • 200 gram pomegranate seeds
  • 85 gram pine nuts or almond flakes (roasted)
  • tray of coriander, coarsely chopped
  • tray of mint, coarsely chopped
  • Juice of two lemons
  • 1 tablespoon sugar
  • salt and pepper

Ingredients

  • 200 gram quinoa
  • olive oil
  • pepper and salt
  • 250 gram smoked salmon
  • 1 avocado
  • half of a cucumber
  • two tablespoons mayo or yogurt
  • ½ teaspoon wasabi pasta
  • sesame seeds
