Barley Salad with Blueberries, Feta Cheese and Fresh Mint

Have you ever tried eating a salad for breakfast? With this fruity beauty, it’s really easy. I know most of you would not think of eating a salad for breakfast, but how awesome if your daily need of vitamins, minerals and fibers are almost all checked off by noon?

Barley Salad with Blueberries, Feta Cheese and Fresh Mint

What do you need for one portion?
- 75 gr barley
- 50 gr feta cheese, crumbled
- ½ cucumber, cut in pieces
- 1 handful blueberries
- 1 handful fresh mint, chopped
- 1 tbs pomegranate seeds
- ½ lime, juiced
- 1 tbs olive oil
- pepper and salt
Rinse the barley and put it in a bowl of water, let it soak for a night.


Then, cook it for about 20 minutes. Drain it and let it cool down. Mix the lime juice and the olive oil with the barley and stir well. Add the remaining ingredients and enjoy your salad!
