Veggie egg whites & brussel sprout omelet

Wakey Wakey eggs and … brusselsprouts? The best and filling breakfast: eggs, bacon and toast 😀 But what if you are a vegetarian or you just want a light but nutritious breakfast? Ditch the bacon and try this new recipe: Veggie egg whites & brussel sprout omelet .


  • 3 egg whites
  • 200 gram of brussel sprouts
  • 1tbl spoon of rosemary
  • a pinch of salt
  • 1 egg yolk
  • 1tbl spoon of olive oil

Chop the brussel sprouts and bake them in a heated pan with the rosemary, olive oil and salt. Bake them until they have a nice golden brown colour. Now add the egg whites (For extra flavour, add shredded cheese to the egg whites). Bake the egg whites & brussel sprouts omelet until you think it has the best texture. I personally like omelets when they are nice and crispy.

I wanted a light but nutritious breakfast. I removed the eggyolks because these are the ones that can make an omelet too heavy on the stomach.  And it’s ready!! 

So now take a bite and enjoy your veggie egg whites & brussel sprout omelet!


But what is the yellow thing on top of it then? I thought it was a waste to throw the yolks all away so i decided to keep 2 to make a sauce for a dessert ( an mustard sauce made with yolk and vanilla protein only), and one to bake separate from the omelet. So the thing on top is a separated baked egg yolk 😀
